Bake: Pumpkin Cut Out Cookies

A little twist on a classic cut out cookie recipe.  While I feel like we have been celebrating Christmas since Halloween, it is time to really get into the spirit with all of your holiday baking.

I frosted these with a simple powdered sugar and milk frosting and then dipped them in colored sugar.  Feel free to decorate in any way you want!

Bake: Pumpkin Cut Out Cookies

Ingredients

  • 3/4 cup unsalted butter
  • 1/2 cup packed brown sugar
  • 1/2 cup solid pack pumpkin puree
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1 pinch salt
  1. In a medium bowl, cream the butter and brown sugar.
  2. Stir in the pumpkin.
  3. Add the eggs and vanilla, mix well.
  4. Sift together the flour, cinnamon, ginger, nutmeg, and salt; stir into the pumpkin mixture.
  5. Chill dough for 30 minutes.
  6. Preheat oven to 375 degrees F (190 degrees C).
  7. On a lightly floured surface, roll out the dough to 1/8 inch thickness.
  8. Cut into desired shapes and place onto an unprepared cookie sheet.
  9. Bake for 10 to 12 minutes in the preheated oven.
  10. Decorate with frosting or candy.
